My Laptop has Swine Flu…

I am a nurse…my job is to take care of and cure sick people. Wish my degree also taught me how to care for my laptop when it catches ill…I think it has swine flu and I am beyond concerned. Apricot Mango BBQ Ribs w/ Nielsen-Massey-Vanillas

One sure sign of summer is the tantalizing smell of BBQ food wafting through the neighborhood. Backyard grilling is a quintessential American tradition. In fact, 75% of American households own a barbeque grill, according to the Hearth, Patio, & Barbecue Association. Though not allowed to grill on my terrace in NYC…I bridge and tunnel myself to the nearest backyard in Jersey where I can get my grilling on!

I like almost everything grilled from pizza and vegetables to seafood and fruit.  Yet, the classic summertime favorite remains seductively succulent barbecued ribs.  However, a plate of ribs can go from delicious to disastrous if you do not know what you are doing. Here are some simple steps to follow to ensure your ribs are finger-licking good every time (and be sure to have Wet Wipes handy for you and your carnevoours guests):

 The first step to successful rib grilling is selecting the type of rib that best suits your tastes and budget.  There are several types of pork ribs available at local grocers or specialty meat shops. Popular cuts are spare ribs, St. Louis cut ribs, baby back ribs (can’t help but sing that song, right?!) and country-style ribs.

  • Spare ribs have more bone than meat, but offer excellent flavor and are a little less expensive than baby back ribs. One slab of spare ribs is usually enough for two people.
  • St. Louis ribs (often called barbecue cut or Kansas City cut) are spare ribs with the rib tips removed. These have more meat in-between the bones than baby back ribs and some prefer the taste of them over other cuts.  A 3-3.5 pound slab will serve two people.
  • Baby back ribs are shorter than spare ribs and less fatty. A single serving is usually a half-slab, or whole slab for a healthy appetite.
  • Country-style ribs are cut from the sirloin or rib end of the pork loin. The meatiest variety of ribs, country-style ribs are sold either as slabs or in individual servings. These pork ribs are perfect for those who want to use a knife and fork.

To prepare ribs, experts recommend first trimming the silvery membrane, called the peritoneum, on the back of the ribs. (If the peritoneum remains on, it will become hard and parchment-like when grilled.) Spices and seasoning rubs should be applied to both sides of the ribs prior to cooking, allowing the seasonings to permeate the meat on both sides.  Near the end of the grilling process, apply sauces by liberally basting meat over a low heat.  Ribs will turn a nice crispy brown as the sauce caramelizes, making it succulent and melt-in-your-mouth good.

 “The key to the tastiest barbecued ribs is low, slow, moist heat and a great sauce,” says Matt Nielsen, chief operating officer of Nielsen-Massey Vanillas.  “By using vanilla in the Apricot Mango BBQ rib sauce — the rich, creamy, mellow flavor of vanilla enhances the sauce by adding a touch of sweetness and cutting the acidity of a potentially tangy sauce.” And quite frankly with over 100 years of expertise, Nielsen-Massey Vanillas know a thing or two about  flavor!

Apricot Mango BBQ Ribs

Featured in Nielsen-Massey’s Century of Flavor Cookbook ($27.00; Amazon.com)
Serves 2 to 4

Rib Seasoning:
11/2 tablespoons ancho chili powder
1 teaspoon kosher salt
1 teaspoon organic garlic powder
1/2 teaspoon cumin
1/2 teaspoon ground thyme
2 tablespoons extra-virgin olive oil
2 slabs baby back ribs

 Apricot Mango BBQ Sauce:
1/2 cup medium diced canned apricots, drained
1/2 cup medium diced fresh or jarred mangoes, drained
1 (4-ounce) can mild chipotle chiles
2 tablespoons dark brown sugar
2 whole garlic cloves
1 tablespoon olive oil
1 tablespoon tomato paste
2 teaspoons Nielsen-Massey Madagascar Bourbon Pure Vanilla Extract
2 teaspoons balsamic vinegar
1 teaspoon Worcestershire sauce
1 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon cayenne pepper (optional)

For the rib seasoning, combine the chili powder, salt, garlic powder, cumin, thyme and olive oil in a bowl and mix well to make a paste. Rub evenly over the ribs. Wrap the ribs in plastic wrap and chill in the refrigerator for 2 hours or up to overnight. For the sauce, combine the apricots, mangoes, chipotle chiles, brown sugar, garlic, olive oil, tomato paste, vanilla extract, vinegar, Worcestershire sauce, cumin, salt and cayenne pepper in a blender container and purée. Store in the refrigerator.

To bake the ribs, preheat the oven to 300 degrees. Unwrap the ribs and place on a rimmed baking sheet coated with nonstick cooking spray. Bake for 11/2 hours. Brush the sauce generously over the ribs. Bake for an additional 45 minutes or until the sauce caramelizes. To grill the ribs, unwrap the ribs and place on a grill rack. Grill over indirect low heat for 11/2 hours. Brush the sauce generously over the ribs. Grill for an additional 1/2 hour. Place the ribs on a foil-lined baking sheet. Cover with foil and let stand for 20 minutes. Successful grilling or baking of ribs occurs when ribs cook slowly over low temperatures.

A Star Shoots Over Long Island…

I wait with baited breath every year for Memorial Day to roll around once again, so I can travel to my dear, sweet Montauk.  Though traditionally not the warmest weekend in the NYC area – nor the sunniest – it is a tradition. For as far back as I can remember, we always open the season of beaching, sanding, surfing and lobstering in Montauk on Memorial Day weekend.

But this year, I was even more anxious to begin the summer sojurn to the Hamptons because I was serenaded by a Star at the “opening pitch”. Ok..me and about 50 or so other people were serenaded by a Star. No ‘twinkle, twinkle little star’ here – after all, I am talking about Ryan Star – armed with the girth, power and heat of the Sun-kind-of-star. 

Ollie’s in Amityville, Long Island was the venue…an unassuming bar in the small sleepy town whose claim to fame was a possessed house. The crowd formed thickly at the stage in anticipation of Ryan Star’s “acoustic” performance – a long awaited for show, since he has been touring with American Idol winner David Cook since February!  I, a grown woman, found myself pushing people over just to get to the front – like a teen-age crazed fan of NKOTB.  And then it began…Ryan Star walked out on stage and the room stood still.  Clad in a Kristen Farrell pendant worthy of a rockstar of his caliber (see next post), as he opened his mouth and intense, passionate music effortlessly flew out, Montauk became a distant thought in my head.  As Ryan engaged with his fans from the low, dark stage – his playful rhetoric with his followers was endearing and at times hilariously obnoxious (he called for his publicist to come in for “damage control” – and the crowd ate it up like ice cream on a hot summer day). 

The set list had something for everyone…a little new, a little old…drummer Justin from the days of  ”Stage” (Ryan’s childhood band) even made a guest appearance for a song. Opening with his new single from upcoming 11:59 (dropping Summer 2009), Last Train Home, sprinkling in the ever ethereal song Breathe, rockin’ Right Now and blasting “oldie” crowd pleaser Psycho Suicidal Girl. Ryan, in true, hard-core rocker mode, ended the show 10 songs performed with a sweat-soaked shirt and a busted guitar string. Need I say more?

Though I consider myself a die-hard fan of Mr. Star, I realized the girls in front of me who drove 10 hours and the ones to my left that flew in from Chicago JUST TO SEE THE SHOW, put me to shame. My only complaint…it had to come to an end. I could have sat in Ollie’s the whole weekend and skipped Montauk all together (and those of you who know me personally know that is a BIG BOLD statement).

Craigslist Doesn’t do it and Neither Does eBay; Two Gen-Yers Tap into America’s Craving for Quick Cash

Tagsellit.com (www.tagsellit.com), a new service that bills itself as the largest community of tag sale enthusiasts, has been coined as the new “IT” place to purge your posessions. The site is the first online aggregator of “physical property sales” and creator of virtual tag sales, allowing everyone from a homeowner “spring cleaning” to a professional liquidating a warehouse to list items singularly or as entire sets. Users can even “map” area tag sales for easy pick-up. Neither Craigslist nor eBay allow users to post and shop sales in this fashion. A brief description, asking price and photos can all be included and uploaded to the site, which also includes “how-to” advice, videos, a blog and even tag sale humor.

To date, the company’s 1,800 and counting members who’ve joined since May 2008 have listed over 2,000 sales featuring one to 200 items per sale. In addition, there are nearly 3,000 weekend events listed on the site each week. The site’s creators, Jonathon Papsin (27) and Matthew Dorman (31) saw the economy changing and tapped into the national zeitgeist, sensing the need to “quickly and easily bring together those who need to de-clutter and pick up some cash with those who need to furnish or collect on a dime.” The two add, “On any given weekend in any given town there are at least a dozen yard sales. We just wanted to bring this oldest of American pastimes into the digital era.”

A modest one-time flat fee is charged for posting a sale on the site. Users can pick the duration, manage their content throughout the sale and communicate with buyers. Those who cannot physically hold a tag sale can advertise a virtual tag sale for buyers to make an offer.

With consumers creatively looking for solutions everyday, Tagsellit.com sees a “match.com”-like future pairing up buyers and sellers on a wider and wider scale. To that end, they have already lined up partnerships including one with Grand Slam Garage Sales, a high school student-owned company which runs garage sales from start to finish.

The company predicts a very busy – and early – tag sale season, recommending potential users to get a jump on spring cleaning, search out their own saleable “treasures” and let Tagsellit.com get them into business instantly.

Mayim Bialik (Blossom) Gets a MUCH Needed Makeover…by Christabelle

On Friday, May 29 at 9pm ET/PT, TLC fan-favorite WHAT NOT TO WEAR returns with a brand new season and a very special season opener. In the series’ first episode to feature a celebrity and after numerous “Blossom” references over the course of several seasons, Stacy and Clinton finally take matters into their own hands and nominate actress Mayim Bialik.

Mayim, now a mother of two, admits she is in desperate need of a makeover and welcomes Stacy and Clinton’s expertise as they try and help transform her style from quirky/hippy and uber casual to chic mom-on-the-go. Viewers will take part in Mayim’s journey as she is thrown into an emotional and physical transformation and learns she can still be true to herself with a new, more mature look after ditching her Blossom-reminiscent rags.

Ever wonder what you could actually buy with $5,000? Season seven includes a new portion of the show that breaks down exactly what each contributor was able to purchase with their shopping card. Additionally, Stacy and Clinton will visit brand new cities including Detroit and Denver, and will conduct some of their infamous “ambushes” like never before as they surprise their fashionably challenged nominees during live TV and radio hits.

And in true TLC fashion, viewers will see the highs and lows of these experiences as Season seven proves that there isn’t always a happy ending when one of the contributors has an emotional breakdown over her new haircut. The series will also reach a major milestone during this season, marking its 250th episode!

Perhaps Blossom will turn to Christabelle’s Closet after the makeover to keep up with her “new look” on a budget! She was the soul reason for my “hat phase” in the 90′s…
